Persimmon Cream Cups and other things

I've always wanted to make these persimmon cream cups and finally found persimmons at the farmers market on sale. The recipe I used came out of the book 'Eat Well, Feel Well' and contains only the inside of the persimmon, strained yogurt, honey, vanilla extract, and pistachios. It's very important that the persimmons are ripe and soft. I highly recommend this recipe:-) It was indeed creamy and sweet and the nuts gave it an exotic flavor. Lovely :-)

Very simple but delicious. We had it on our salad with grilled chicken. Quite tasty! By the way, I got the cool jars from the store Oil and Vinegar.
